Homemade Pumpkin Waffles
After carving this year's jack o' lantern, I had lots of yummy pulp leftover so I figured pumpkin waffles would be the best way to make use of it's yummy goodness!

Dry Ingredients:

2 cups all purpose flour

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons pumpkin pie spice

Wet Ingredients:

3 eggs
-
1 1/3 cup milk
-
1/4 cup maple syrup
-
3 tablespoons butter, melted
-
1 cup pumpkin puree (fresh or canned)

You'll also need a waffle iron and non-stick spray.

In large bowl, whisk together dry ingredients.
​
In a separate bowl, mix together wet ingredients, then fold into dry ingredients. Let sit for 5 minutes.
​
Spray waffle iron's cooking surface with cooking spray. Cover bottom portion with batter. Close and let cook.
​
Makes six 6-inch waffles.
